I lost 40 lbs without cutting out my favorite Mexican foods – my Trader Joe’s tacos are so easy to make and delicious

A HEALTH-CONSCIOUS woman has revealed her go-to meal for staying fit without sacrificing taste.

She said she lost 40 pounds without restricting her favorite Mexican foods.

Eli (@eligetsfit) filmed herself cooking one of her favorite recipes using ingredients from Trader Joe's.

"I lost over 40 pounds being in a calorie deficit. And I'm going to show you the quesadilla tacos that I love to make," she said.

"I get this beef birria from Trader Joe's and it's so good, the macros are incredible.

"And I use some queso chihuahua from El Super, while the birria is heating up, I chop up my cilantro and onion, and then I go ahead and separate it from the consumé.

"This can get pretty messy, so I go ahead and set up my little station and start dunking my tortillas in the consumé," she added.

Consumé refers to a broth used with birria that is spiced to perfection.

"Pop [the quesadillas] on the grill and put some queso, some birria and fold them on up," she said.

She also said she doesn't skimp out on the portion, making four quesadillas with her recipe.

"I like to get them really crispy, so I just go ahead and leave them on the grill while I'll repeat the process," she said.

"And I make about four of these. I use one serving of cheese, but if you want to go ahead and add more, do it.

"When they're all crispied up, I go ahead and add my onion, cilantro, and I would add some chile serranos if I had it.

"And then you just go ahead and dunk it in your consomé and chile de tómate," she added.

Her recipe, using the beef birria from Trader Joe's, typically retailing for $7.99, drew in many viewers who shared their thoughts in the comment section.

"My Trader Joe’s never has the birria," one viewer complained of their local inventory.

"Yeah, when I see it I stock up," Eli wrote back.
