Easy recipe for Boxing Day Turkey pie is great for using up your Christmas leftovers and is ready in 20 minutes

IF you’re searching for a Boxing Day treat that all the family will enjoy tucking into, look no further. 

One foodie has unveiled his recipe for his delicious turkey pie – and it cleverly uses all your Christmas leftovers up in one go.

Chef John Gregory-Smith proudly unveiled his dish as he encouraged others to follow in his foodie footsteps. 

“One of my favourite things about Christmas is all the leftover food on Boxing Day,” John explained.

“This Christmas, I want you to join me and turn your leftover turkey into my lush turkey, bacon and leek pie.”

John, who has done live cooking demos on TV and released cookbooks, then continued to lift the lid on the simple method.

In the video posted to his TikTok account @johngs, John showed each step one by one. 

He explained: “Fry off some bacon or pancetta (130g cubed), whack in some leeks (two large, finely sliced) and get some colour on them, then go in with a ton of garlic (four cloves crushed).

“Switch up pans if you need more space, then you’re going to go in with some flour (two tablespoons) and water just to make it a little bit thick.” 

Once the sauce is to a good consistency, John said it was time to put the leftover turkey (500g) into the pan, alongside some double cream (300ml), mustard (two teaspoons), lemon (zest of a third) and plenty of salt and pepper.

However, instead of frying off, John instructed: “Don’t heat that up as we’re going to cook that off in the oven and we want it to stay lovely and juicy.”

He then showed how he put the whole mixture into an oven-proof dish and level it out.

The final part of the preparation is to add some shop-bought puff pastry over the top and “brush it with some eggs so that it goes super crispy.” 

John then popped the dish into the oven to bake for 20-25 minutes at 200 degrees, and once it was ready, he couldn’t resist digging in, as he said: “This is how you win Christmas.

“Everyone’s going to love you if you make it.”

The recipe got a giant tick from John’s 372k followers – who said it also reminded them of one of Jamie Oliver’s recipes.

One social media user wrote: “I’m definitely going to make this, it looks amazing.”
