10 hearty kale recipes for soup, pasta, stew, salad and more

Kale was trendy, and then it was cliché. It’s an oft-repeated tale. But the truth is, kale has always been here and always will be.

There are plenty of reasons for that. Like other leafy greens, kale is versatile and flavorful, not to mention packed with the fiber and nutrients (iron, calcium, folate, vitamins A and C) we all need to stay healthy and strong.

Kale, however, has earned a reputation for being, well, tough to chew and digest. (Not into kale? Most dishes are fine with something similarly sturdy, such as collards, chard or mustard greens, which generally don’t require massaging.) As several of these recipes from our archives show, you can always consider the popular step of massaging the leaves to help tenderize them.
